First Time Ecuador

Hi Just looking for a little information on getting around Ecuador we are 3 Canadian (red necks) lol from the frozen North and never been out of North America. We land in Quito and depart Guayaquil. We were talking about maybe taking a tour but my thinking is we would not get a real feel for the country if we did that. Any suggestions on traveling out of Quito towards the Coast looking for best route Via land? Hired driver, bus, train ect. As well as any suggestions on Hotels,food, and maybe some Do's and Don'ts would be a great help. I have done some research Via internet but it is always nice to hear it from someone that has Bin There Done That. Thanks For Your Help Jim.
