Yet another American

Hello.
I am Anne.
My father turned 80 this year and we were about to take an around the world adventure when I suggested South America. I told him I wanted to go to check out if living there and perhaps having a small business could be a reality.
Cuenca, Ecuador is my target but I am very open to advice.
We are thinking of flying into Quito at the end of July or mid-August.
If we were to travel only 4-6 weeks, what route might we take to get the best idea?
