Help with first trip

Going on a first trip to Ecuador/Panama in mid2012 to try to figure out where to relocate. Having trouble getting started. Any suggestions on best way to set up hotels/airfare/rental cars and for fair prices. Travel agents so far only have provided hotels in >$100 range. Want more of local flavor....b&b, clean local places...and see hostels that appear to be like hotels (are they different?)...any help would be appreciated or guidance in the right direction....THANKS-gracias
