Living and working in Ecuador

My husband and I are seriously considering Ecuador to retire.I do not speak spanish very well but my husband is fluent being of puerto rican descent.He lost his job a year and half ago and has not been able to find full time work since.Seems no one wants a 60 year old chef.I own a consignment shop so we get by.He is thinking of taking early retirement at 62,but that will not get us very far.So we were wondering how hard it would be for him to find employment at least part time.Maybe as a translator or something like that.Any info would be helpful
