6 month VISA leave

Hola,
I am researching easy transitional countries to visit while satisfying the 6-month leave requirement with a tourist visa. Does anyone have recommendations that they would be willing to share? I am looking for a low-key, low-COL location where I can do online ESL or tutoring so a good internet connection is crucial. I am continuing to learn as a new Spanish speaker, so I am limited, but motivated speaker. I understand that the more rural I go, the less internet security I will have. Anyone with experience or ideas? Thanks so much!
