Carte de sejour: Is it worth the hassle?

My husband and I would like to live in France for about 8 months out of the year. (In fact, we've just bought a house near Buis-les-Baronnies.) We assumed that we'd have to obtain the carte de sejour, but I've also heard that we can stay up to 90 days on our passport, then leave France for a time. Upon return, we have another 90 days, etc. Does anyone know about this? Is it legal? If so, how long does one have to stay out of France? Can one just go to another EU country for a few days, for examle? The process for getting a carte de sejour seems a bit daunting, and we're just wondering if it's worth the hassle.
We would really appreciate any suggestioons/info/true-life experience stories regarding this topic. Thanks in advance.
