Health coverage

We are moving to France in a couple or so weeks and will need health care coverage until we can get on the National system. Does anyone know if we can get a Mutuel assurance to cover us fully and then convert to top up insurance?
We have coverage in California which we could keep but it is very expensive and we would rather drop it if we can.
