Notaire question

Bonjour, I am in the process of viewing apartments in Nice, with the hopes of purchasing one very soon. Numerous individuals have advised I should have my “own” Notaire, rather than using that of the agency. So as I scout for a Notaire, once I find him/her, do I need to contact them while I am in this process of looking for apartments to inquire if they would represent me in a property purchase? Do they then decide, based on certain criteria, whether they want to represent you or not? I would assume they are quite busy and that one would need to get this figured out up front before one gets to the offer process. Any thoughts/experiences to share would be most helpful.
