Airbnb first three months?

Hello, I’m moving to Montpellier this Fall. I’ve been told you shouldn’t go the Airbnb route - that is - rent for 3 months (or so) while you’re finding a permanent place to live. How many of you have done it this way and were successful in getting your long stay visa? I think it’s correct as well when you apply for your Carte vitale you have to show a utility bill(s) in your name, but how can you do that with an Airbnb? Thanks for any insight you can give me!
