Info for "Free-lance".."Self-Employed"?

I have been in Germany for the last four years working at The University of Munich as a visiting scientist/student. I have a student visa which only allows me to work at the University, although I was not studying and have 11 years experience in the field. I would like to get a work visa for self-employment. I am from the States. Has anybody gone from employee to self-employed and if so, how did you do it?

Time is coming up on my visa and I need to get the ball rolling. As a note I would like to open a small business selling handmade candles, etc...

Any help would be greatly appreciated!
