Texas to Ireland?

I'm an american who'd like to move to Europe permanently, preferably Ireland. As I have no college degree, I expect it to be difficult for me to get a work visa/find regular employment. But I have an alternative income option. In America, I've been doing "independent contractor" jobs for a few years now. These are jobs where instead of getting a paycheck, you are paid for services as a non-employee and no taxes are taken out. (you are expected to file with IRS)
These "jobs" have included being a document courier, posting flyers, and being a test subject in clinical trials.
I'm wondering if I could get the same kind of non-employee work once I get to Ireland and would I still need a work visa/green card?
I've already talked to a clinical trial site in Belfast and they said they'd use me. But that may not be steady enough by itself to pay my way.
Any advice would be appreciated. Thanks.
