What do I need to work?

Hey....I've been going to Sicily for the past 2 years...I lived there for a year and then this past summer I spent 3 months there with my fiance. I have decided to take a year off school and make the move there earlier than planned because I was first going to finish my degree in Linguistics, however I don't really know if it is worth it. My student loan will be absolutely extreme in the end, and it's hard enough being apart, especially if in the end my degree won't help me much. Is it vital for someone to have a degree in order to find good work (either in tourism or language) or can it be done by just speaking both languages (I am bilingual)? I have duel citizenship, so I am not worried about that. I am going to try the year and see what is offered to me, but I really would like to know if having a foreign degree is going to put me ahead at all or just in the end put me in extreme debt. I would like to make it work without staying in Canada for another 3 years. Thank in advance!
