Staying Past 90 Days?

I'm looking to switch careers by the end of the year and leave the US for Italy but I don't know how to get a visa to allow me to work and stay longer than 90 days.

How did any of you do it? I'd like to follow in the footsteps of others who have been successful. I doubt I'll be able to get a company to sponsor me. I'm most likely going to get certified in teaching English as a second language but still, that won't guarantee me a visa.

Oh one more thing. I don't want to do the illegal thing, which is to just avoid the polizioti and work under the table. And if there is a way to declare myself as self employed and get a visa then I'm willing to do that too.

Any suggested paths you can provide is greatly appreciated.
