Need Visa Help!!

Ciao!! I'm currently living in Venice for about a month now. I'm a nanny for a wonderful family, who wants me to stay a year... one problem. I'm from the United States, and can only stay 90 out of every 180 days. We tried going the route of getting signed up for an Italian course and getting a student visa, but I was told I would need to be going full time for my master's or doctorate, because I can take entry level classes at home. I am going to try to apply for a working visa, but I hear it is hard. How much trouble would I get in if I just stayed in Italy and tried to go home after a year? Would I be banned from the EU?? I love this job and Italy, and I don't want to leave after 3 months!! What do I do??
