proof of residence for short term

Hello

I have a quite specific problem

I'm working in Italy short term and will be flying to China on the 8th of December. Because I'm an eu citizen and I'm only here for a couple of months I didn't register with the commune or anything.
Now the Chinese visa service are telling me that I need some proof of residency to apply for the visa here
My landlord says that it's a difficult process to get a residence permit, but I'm not even required to get one by itAlian law, this is just for the benefit of the Chinese visa service
Is there something that I'm overlooking? Is there a document that I can get simply for this purpose?

I appreciate that this is a bit of a strange one, I'm a bit panicked at the moment, the visa process only takes a week, but I need to get this document and I'm at a bit of a loss....
