Work visas for volunteers

I'm planning to bring my family to Nepal and work as a volunteer, most likely for one of the many little local NGOs. Is it really hard or easy for them to arrange a work visa for me (and thus for my family)? Who is good at such things? Who can help? Or is it a real hassle? Should I instead sign up as a student at the university, and do a research project that is based on NGO service? I'm actually in my 40s, so I assume they won't accept me at the immigration office as a 'student'. Or can one actually keep extending the tourist visas beyond the time they say in the official literature (6 months per calendar year max).?
