UK to NZ back on the cards

Hello fine folk of the forum, I seek your wisdom.

About 10 years ago my wife and I were going through the processes involved to leave the UK and relocate in Dunedin with our children, but in order to achieve the necessary points required my wife needed to complete her teacher training, and after much discussion we decided that it would be a bad idea for us all to move if she was forced to do a job she didn't really want to do.

However, I'd like to start the ball rolling again and come up with a plan to pique her interest in moving, but this time without her needing to retrain. Also I'd like to consider a totally different destination and seeing as it'd be impossible to afford to visit every town and city, then I was hoping to narrow down the search a bit with your collective guidance.

To start the ball rolling here are some basics:

1- We no longer want to be so damn cold all the time - I'm 40 now and my joints already hate the cold, so warmth is key.
2- We're not the types to spend endless hours on beaches, we'd much rather wander through countryside in our spare hours.
3- There is a large company in Auckland that I deal with in my industry in the UK and they will be my "plan B" for work if I can't find anything else, so I might have to factor in a commute.

If there's anything else you think I should consider, then please comment. It's such a long time since I did all this stuff that I've forgotten everything!
