Scotland - around Midlothian area

I have heard that it may be difficult to purchase fresh produce especially in winter months, even in a big city such as Edinburgh. Because I am largely a vegetarian (I do eat meat but for my health and heart it is better for me to largely eat vegetarian which includes lovely fish).

Can anyone speak to living in Scotland and the availability of fresh (and when possible organic) produce and meatless alternatives? This may seem like a small matter in relation to cost of living, etc. but it matters to me and my well being.

Also, if anyone is currently living in Scotland, and can give me feedback on health care and the general attitude towards an ex-pat in Scotland, I would greatly appreciate it!

It is one thing to be a traveler for a time in a country and another to actually put down roots. Having and being in community is vital and part of well being too.

Is there a different between the general attitude towards ex-pats in Ireland from ex-pats in Scotland? I wonder about fresh produce as well in Ireland in the winter months?
