Study as an American

Hi all! I'm from the USA and currently living in Malaga, Spain working as an aupair (nanny) I have a visa until July and for the next fall I really want to finish my university studies. (I studied one year at an American university in the USA.) I have been searching all over and it seems to be hardly imposible to study at a Spanish university as an American citizen.
Does anyone have any suggestions? I'm very open to all ideas. Studying online, studying a 2 year degree instead of a 4 year, or taking a course etc. I'm looking for something that will qualify me to extend my visa!
