Best places to live for a month+

Hello

Considering to live in Turkey for a month+ at the time, probably in the Spring and fall. What are the best places in term of safety, relative dynamism (foodie and wine aficionado here), affordability (Can afford medium to medium + cost)

So far have visited Istanbul a couple of times (definitely something I will try for a month+), visited Yalikavak last October (love the quiet fisherman's village vibe), as well as Cappadocia (but don't think it's worth a long stay, when I return). Haven't been to Antalya or Bodrum.

Any advice welcome guys!
