Moving in the fall, looking for income ideas, very long winded and full of questions;)

Hello everyone, my husband and I have decided to move to Nicaragua by the fall of this year from Canada (we just cnat handle another winter lol). We have 2 small children and possibly a teenager (my stepdaughter who is currently with her mother but might come with us).

We are thinking of the SJDS area but know it can be a bit more expensive. What I am looking for is ideas for a bit of income as we are not retired nor wealthy. We are looking for something that would generate around $1500 to $2000 monthly to cover our monthly living expenses and be able to put some away as well, or use to expand business in the future.
We have been considering buying a small hotel/hostel but the prices ive seen online seem a bit out of our price range.
Are there many opportunities to lease/manage existing businesses? Is there a particular niche that has lots of room for a new business?
My husband is a driller by trade and has experience drilling road contruction, mining and water wells, with all the new developments is there opportunity for him to be drilling wells or is this more done by locals?

we are not looking to live the high life, just a simple life where we can spend more time together and with our kids, any and all ideas/advice no matter how random would be most appreciated, thanks in advance!
