Eloping to Granada

My girlfriend and I are eloping to Granada. We've never been to Nicaragua. Does anybody have an idea where we might perform a small ceremony in Granada that is not in a church? Something more private but still outside somewhere...

Even more random- does anybody know of a justice of the peace or a person who can fill the roll of officiant at the ceremony? We will be legally married by the time we arrive, but are saving the ceremony for Granada.
