Mountain Biking Nut

Hi, I'm retired and heading to Central America with an RV. I'd appreciate suggestions of places with good cross-country mountain biking. My "job" now is training for and doing off-road triathlons. I'm looking for trails with good climbs and some technical challenges. Near open water swimming would be nice, also. Note: I'm not looking for flat bike paths or Red Bull type downhill runs, just challenging XC riding. I'm fluent in Spanish and would prefer a more rural versus urban area. Any suggestions would be appreciated.
