Reservations or not

When I make my trip this summer should I make any reservations at places to stay or not? When I went to Belize, I regretted it because I didn't like the 1st place and was stuck. I am want to go to Granada, some near San Juan del Sur and may the Leon/Poneloya area. Also my flight into Managua doen't arrive until after 7pm.
