Making Rum

Hello all.
I'm looking at some property for sugar cane to make some rum.
Im having a hell of a time finding out what kind if paperwork i would need for that.
Im not talking a monster facility but a small batch facility that i could potentially sell.
I have experience making rum and beer. I would probably have a family take care of the property most of the time and I would go down and manufacture and be there for harvest etc.
Anyone have some idea's for me?
