It's polite to ask if they speak English before starting a conversation. When dining, keep in mind that the Dutch typically do not begin eating until everyone is served. It's also customary to keep your hands on the table (but not your elbows) during the meal. In terms of tipping, service charge is usually included in the bill in the Netherlands, so tipping is not obligatory. However, it's common to leave small change or round up the bill if you're satisfied with the service. Lastly, the Dutch are known for their directness, so don't take it personally if they come across as blunt.
