Need Advice on opening a restaurant in Ecuador

Hi,
My partner and I are moving to Ecuador and are looking to open a raw/health food restaurant in Vilcabamba or Cuenca. We have already checked out Vilcabamba and are now going to Cuenca to see opportunities there. I am just asking if anyone knows anything about starting a buisness in Ecuador or names or people or sites that would be useful in starting this process.
