Places to stay Manta and Cotachachi?

We might be visiting in a few weeks to see if we might want to move to Ecuador. It depends on someone taking care of stuff here in the US for us, so not sure when we can come.

We are looking for inexpensive places to stay in Manta and Cotachachi, along with a hotel in Quito for the days we are flying in and out of Ecuador.
