Residency visa regs?

i am a us citizen and my fiance is a Nepal citizen. the govt. mite not let her come to usa to marry me so we're thinking of both moving to a diff country. ive been to ecuador en un viaje de moto en "04. it seems like a good base for everywhere in SA. but how difficult would it be for her, Nepal citizen to get long term visa. and me for that matter. we dont have much money, but maybe enuf to live there w/o working. are there nursing schools in cuenca or other cities besides Quito? she wants to go to nurse univ. i speak passable spanish, she speaks english, but can learn fast.
