MAKING PUMPKIN PIES IN ECUADOR;

As you probably already know, canned pumpkin is nowhere to be found in Ecuador and the sweet potatoes are not fit to eat. What to do. What to do.

Well the solution is at hand from my friend Noshy. First go to a Mercado like Fiera Libre and buy a pumpkin—or calabaza, about 3 lbs per pie. When I was young that was how we made pies, but trying to peel a pumpkin is a real pain in the caboose. The solution is to cut the pumpkin into 3-4” pieces, scooping out all the seeds and steam, NOT boil it in a large pot until done and the skin or peel just comes right off. If you have a pressure cooker, It takes 8-10 minutes and about 30 minutes in a large pot. Then you use a mixer or food processor to beat the now peeled pumpkin until it is smooth. Now you are on your own, Just use your favorite pie recipe yum yum.

Oh, I almost forgot, you will also have make pie crust from scratch, if you remember how. You will need lard, yes lard, it makes the best pie crust and besides on thanksgiving who’s counting calories. Lard is called—manteca de cerdo, you also need flour, salt and a little water. There are dozens of recipes online.
