Coming to Ecuador for the first time

My wife and I want to come to Ecuador for the first time. I know that there is so many interesting places to visit, but unfortunately we have only 7-10 days due to that four letter word called "WORK". We are thinking of coming around the first week of December.
I know that everyone will have their own favorite places and have different likes for different interests.
My question would be that with the very limited time what airport should I fly into? What would be a good city and area to stay in to take day trips and get a flavor for the Ecuadorian culture and sites?
We are both in our 60's and are not looking for high adventure. We like to see historic and cultural sites. I like photography, nature, bird watching, botanical gardens, visiting the Amazon, etc. We love good food and meeting local culture. I am also afraid that my wife may have trouble with High Altitude sickness. Whatever area we go to, I hope that there are bus tours or guided tours that can show us around.
I am hooked on living in Ecuador for months at a time, but I am trying to show my wife who is tagging along that it will be a nice place to retire to.
i know that our time is very limited and that it will be hard to really get to know the country. With this limitation in mind, I am interested hearing back from forum members as to what would be a possible itinerary? What would be some of the must see, and are there some restaurants (not looking for dressy and fancy) that would be great food? Festivals, markets, expat meetings, etc. during this early December trip?
