Moving to Central=South America

We are looking at moving to El Salvador, Mexico, or another spanish speaking country in Central/South America in the future. We are an American/British family who have already lived in Spain and France and have travelled alot around Asia. We understand and expect the hiccups that come with moving abroad. We are wondering about which country would be best for quality of live, taxation of foreign income, few Covid restrictions and safety regarding raising our 8 year old daughter.
