What is it like living in the Provence area

I currently live in the USA and considering retiring to the Provence area. I have visited many times and fell in love with the village of Saignon. What is it like for an american to live in a small village?

My french is currently not great but open to improving it. My interests are cooking, hiking, yoga, lavender, biking, wine, farmers markets, reading etc..

Is it easy to assimilate in France? I would love to make friends with both local french people as well as ex-pats.
