Boating/fishing along the south shore

My experience in boating/fishing is limited to Lakes Erie and Michigan, plus some small inland lakes. On the Great Lakes a lot of fishing can be done within 5 miles of shore. Safe boats are 20 ft or longer. The Great Lakes have no tides or swells, but they do have waves, ranging from calm to 7ft or more. Very little productive fishing can be done when waves exceed three ft.
I'm seeing adverts for rigid inflatables in Ireland. Obviously the weather must cooperate but can these seemingly small craft be safely used on the open sea of the south shore? If so, how far out must one go for productive fishing? What kind of tackle and techniques are used? What kind of fish can be caught?
Educate me please.
