Renting in Ireland when you're Self Employed

Hi there, I've been a successful digital nomad for over a decade. I'm a new Irish citizen and plan to move there with my husband in the spring. What I'm trying to figure out is how to best document you're reliability with landlords if you are self employed. Do they want IRS statements? Any insights and additional tips are appreciated.
