Moving to Beautiful Puglia Region Soon...

I will be moving to Puglia Soon. Converting an existing home into a B&B. It already is a working farm (olives, figs, etc).

I'm wondering if anyone has any info on the legal requirements for establishing a B&B as opposed to an Agriturismo. We have a professional background in hospitality and culinary fields; we are thinking about making it a gourmet getaway destination.
