Vacation for few month in Italy

I'm a Canadian woman, 53 year old planning to go to italy in October and stay there until December (be back home before Xmas). I'm looking for an appartment in a nice town with good weather,suuny and not to cold during the period of my stay with water view. I like to take a course to learn Italian. I don't want to drive so it should be close to shopping area. I'm a hiker and ruuner, so exercise must be a part of my life. Please advise where do you recommend, the cost for a 2 bdroom place and other associated cost. Thank you so much if someone can help me for my planning.
