Interested in road biking in umbria?

I've planned a surprise 40th birthday trip for my husband who's an avid mountain and road biker. We'll be in Umbria in late May and early June. Any cyclists in the area interested in a long ride?
Also, any recommendations for Umbrian towns with a bike shop? We're considering making either Spello or Spoleto our home base. Open for suggestions.
