Running 2 Australian Business whilst living in Italy

We have recently relocated in Italy. We will be her for a number of years. My partner and I are both Sole Traders and we plan to keep working as Australian for Tax purposes. I have found information about being employed in other countries and being taxed in Italy but can not find any information on being self employed. Some one recommended that we open a branch of our businesses in Italy but neither one of us is a company. We are both Therapist. Love to here from anyone who may have knowledge of experience in this area.
