What to do in case of illness or death?

I am a dual citizen and contemplating a move to Trieste. I am single and wondering how to prepare in the event of illness or death? For instance, do I have two wills - one here and one in Italy? How would I arrange for my physical transport back to the US, should I "expire" while there? etc. Important questions that I could use some help and advice with. I would likely drop my US health insurance, as it wouldn't cover me while in Italy, and is an additional expense.
