ER Visa application - do I need to state my current employer if leaving in several weeks?

I will be leaving my current job in about 6 weeks and on my ER visa application have noted my "occupation" and "employer's name, address, phone number" as requested. However, I do not have a letter from my employer, since I have not given my notice yet and don't want to divulge my plans. I was going to explain that I don't have a letter because I am leaving my job shortly and want to keep it confidential (and also ensure bonus payout). Someone who had a visit at the consulate said if you state that you are currently employed, then they WILL require a letter from you employer stating that. Am I better off to apply as someone who is not employed, and leave that section blank, since I will be leaving in several weeks and don't have a letter? I'm thinking maybe that is the best thing to do. Thoughts?
