Too Soon?

Greetings all! My partner and I have been thinking about our exit or retirement options for a few years now and we're closing in on Italy. While I still have a couple years left before I can pull the trigger on retirement, about 4 years(YEAH!) left on the daily grind I'm curious about the timeline of getting things lined up for which ever VISA we'll need and how to 'live' while there.

I guess I should ask, am I looking at this way too soon? Should I be doing the research to get through all the red tape later on, say a year before we plan to go or 6 months?

If we're both retired and living on our investments is there a specific VISA we should want to have? How long is the process to obtain that? Do we need to have a signed lease on an apartment before we apply for that VISA or can we just hop around for a few months in Italy then go to France for a few months then back to Italy or what ever. This may offer us an opportunity to explore more before we decide to settle down.

I've been trying to find the answers here but there's so much material it's confusing so I thought I'd ask outright.

To reiterate:
If we're going to hop around Europe a bit do we require a particular VISA or can we just wait till we settle on where we want to be and deal with it then?

If we need a VISA which one? How soon should we start the process?
