Reacquiring Citizenship/Family Questions

I am in the process of reacquiring Italian citizenship through the declaration process at my local consulate (SF) and then establishing residency in Italy in the summer of 2018. My hope is to live in Italy for one year with my wife and 8 yr. old son. Questions: 1) do any of you have any experience with the reacquiring citizenship process? How long (once you established residency) did it take, how difficult was the paper work, etc? 2) What do I need to do about my family? The consulate has said that we can NOT apply for an elective residency visa. Thus, we will all enter Italy on the 3 month tourist entry but then we will need to extend our stay. My situation will be easier, because I will have the reacquiring citizenship thing that will support my stay? Will it be challenging to have my wife and child extend their stays, as well? Does anyone have any experience with such a situation?
