How much of a nightmare is the visa situation?

Hi friends, I'm an American citizen looking to relocate to Europe sometime later this summer for the next year or two at least. To level-set, I have a remote job that pays reasonably well that I would like to continue doing from elsewhere. After two years in lockdown, I seriously need a change of scenery. As to where that scenery is, I'm open to any and all suggestions. Italy has been a dream of mine, but a cursory look online makes it look like getting a visa for remote work is challenging to say the least. Anyone have experience with the self-employment visa? Is it really that hard to get? What other visa options exist?

No doubt that I'll need some legal help along the way - am I better off with an American lawyer or should I look for one in Italy? (Assuming I go that route..). I'm at the very beginning of this process so will happily take any and all advice you have to offer. Thanks!
