Immigr Attorney & ER - tell me not to panic

I know I'm going to sound naive here, but I'm hoping someone can talk me down during this stressful period of attempting to realize a lifelong dream of a move abroad. My wife and I moved to NYC to "stage ourselves" for a long-term move to Italy and believe we meet all the requirements for ER. In order to increase the odds of success with the NYC consulate we hired an Italian-based Immigration attorney who we had discussed the process with via a remote meeting - he is obviously very capable and knowledgeable with the process and the quirks of various US consulates so we engaged with him and his firm for assistance in assembling our ER submission. Our consulate appointment is schedued for late April.

My question has to do with the Italian laid-back, take-your-time approach to work - the communication turnaround has been much slower with our attorney than I expected. For whatever reason I expected more immediate responses on email questions, etc.. I guess I naively thought an attorney would move faster in this regard, especially given knowledge of our timeframe. I feel like I just need to buck up and not panic, but I'm simultaneously trying to plan a trip to secure the required apartment lease, so of course I feel more urgency than he does. It's tempting to call him to push for answers on certain items, but I don't want to be overly pushy in a way that will negatively affect our ability to work the process through to completion. Do I just need to relax and STFU?

And one additional question - for anyone who does not already own a home in Italy is it pretty typical to have to get a lease that starts several months prior to the date when you believe you will actually move in (due to ER application at consulate, processing time, etc). Pretty sure this is the case but interested in other takes. Thanks!
