Temp vs perm residency

I’m currently renewing my permesso di soggiorno every year and wondered if anyone might know what happens after 5 years. I understand we can apply for permanent residency at that time but what if we don’t want that? Does anyone know if we can continue to renew our permesso past 5 years? Thank you
