What country?

My fiance and I are serious about moving outside the states. Here's what we're hoping for:

A simple, quiet life where I can work for myself and we can eventually work into owning a bed and breakfast, shop, or cafe.

Here's what we aren't hoping for:

being jailed or deported.

So far, I've looked into England, Ireland, Scotland, and New Zealand.

The problem I'm running into is being primarily self educated. I've been a librarian in a small town, a radio producer/announcer, and freelanced fixing computers on a home and small office scale. I don't seem to have the IT or medical qualifications that would put me in demand in most of these countries.

So then to start one's own business you have to have a minimum amount of money and be able to hire at least two natives. NZ seemed the most reasonable in this respect. It seems in most countries you can't just come over and put up a sign.

So. Am I overlooking something, do i need to just buckle down and up my qualifications in areas that I'm not passionate about, or am I just going against impossible odds here?
