Looking for a new home

Hi, I'm Garrett and I live in Tennessee here in the United States. I'm a 35 year old single dad with a 16 year old daughter. I've always loved the idea of moving to another country and I've done a little traveling in my life (Italy, Argentina, & Colombia), with the added stress of not liking the direction that the U.S. is headed in adding more fuel to the fire. There's lots of reasons I want to move ranging from wanting to break free from a political system that I'm done with, on both sides and just having more freedom in general, living somewhere cheaper, and just for the hell of the adventure! And my daughter loves the idea too! I seen some time ago when I began looking at housing and land prices elsewhere and I realized that I'll never have here what I can get many other places in the world, especially being single. What I'd like here is any and all helpful input form anyone, especially fellow/former Americans that can give me advice on moving there, with an emphasis on the affordability. I wouldn't have a job lined up and I'm definitely not retired so renting is not an option, I need to be able to buy something with money I currently have saved or will have saved soon. With a house paid for, no rent/mortgage, what would living expenses be like? Note that I'd be attempting to live on a 90+ % vegan diet (rice, potatoes,...) but I'd want an occasional steak. What are job prospects like there? Any and all help is greatly appreciated. I currently work about 45 minutes from home, work at least 8+ hours at work, and I come home with Netflix as my reward, there's got to be something better than this. Thanks all!
