I don't know what I am, except I know I'm exhausted...

Greeting friends. I wanted to introduce myself. My name is Marc, I've been married for 20 years to my short deaf cute wife. We're originally from Sacramento CA area which I started an IT business. after some health problems (kidney transplant for my wife at age 28) we moved to CO to be closer to my family for support, we adopted 3 kids from foster care (current ages 14/13/9) and then moved to Idaho to be closer to my business but still not "in california" in 2016. during that time I ended up with some health problems as well (IGa vasculitis, still not 100% managed)
IT as a job is stressful, running a business is stressful, running it 24/7 is completely stressful. I sold the business to my partner and work for it now instead of 65 hours a week "32" hours a week (wich means probably closer to 40 but whose counting?)

also during this last bit we've gone through a major faith crisis (going from full Mormon/married in temple, missions, to finding out it really IS a cult) I bring this up because it has shaken us, and we really want to "live life" and be just "good people" not feel like we're being judged if we don't give 10% of our income to our church we're not to go to heaven.

i'm exhausted. I need a change. I thought maybe just going on a trip for a month (1-2 weeks off then working 3 days a week the last two weeks) and during that time start "looking" for where we just want to leave the country (at least partially? health care is quite important to us)

I've always loved Costa Rica and Panama in theory. I want to just leave the USA, and start looking for where we want to retire.

Reading all these articles on expatexchange.com have been amazing but nothing really fit what are are attempting to do-- because I don't even know what we're trying to do. I need to get away, and we'd love to start looking for places that we could retire in. Maybe live in two places? TX+central America?

The children we adopted are full Mexican and we'd love to learn spanish as well.

Short team we'd like to go somewhere, and we'd like to while there get a feel of some of these countries and maybe live there 2 months out of the year. where would you recommend? after reading ALL THESE LONG PARAGRAPHS I JUST WROTE THAT BLESS YOU FOR READING?

Anyone start off like where we are that might give advise?

Thank you so much, everything I have been reading has been amazing but I just don't know where to start to find maybe a vacation rental we can trust close to health insurance+vacation+semi safe for families, but still give us some freedom to experience culture and look around for our short term future to plan for our long term future.
