Except in upscale restaurants in Manila, I've found that even the most knowledgeable chefs and steadfast establishments are unable to consistently produce quality Italian, Mexican, American (what's that?) Japanese, Korean, etc. meals because the authentic ingredients are both too expensive to add to their menus and unavailable on a consistent basis.
I haven't been everywhere, but Filipino food is less appealing to me than the national cuisines in the many places I've spent enough time to draw conclusions. Nevertheless, I spend a lot of time questioning the locals concerning the best places to dive into local cooking wherever I find myself in these many islands. Expertly prepared local cooking is far superior to what's usually served up as international cuisine.
